Chef Nouel Catis
A Filipino-born pastry maestro based in Dubai since 2009, Chef Nouel Catis has built a legendary reputation through viral dessert creations and groundbreaking pastry artistry. He is renowned as the original creator behind the sensational “Dubai Chocolate”—a gooey pistachio knafeh, infused bar that became a global TikTok phenomenon.
Catis trained at the French Culinary Institute in New York and honed his skills at elite hotels including Burj Al Arab (Dubai), Sofitel (Fiji), Westin Beijing during the 2008 Olympics, resorts across the Maldives, and Jordan’s Kempinski Ishtar Dead Sea. His work blends nostalgia, heritage, and bold innovation, a philosophy he calls “heritage chef” that infuses childhood memories into every creation.
In October 2024, he launched SNA’AP, his own brand of artisan chocolates and desserts, which sold out its initial batch within days. SNA’AP embodies vibrant nostalgia, sustainability, and creative collaboration, offering treats that celebrate global flavors and local storytelling.
Honored as the Emerging Global Filipino Icon for 2024 by The Global Filipino Magazine, Chef Nouel continues to reimagine desserts, crafting experiences that are visually stunning, emotionally resonant, and irresistibly delicious.
